Who we are
Since 2018, we’ve been serving up fresh, local flavors to our South Burlington neighbors. Whether you’re grabbing lunch, ordering catering, or picking up a Vermont-made gift or bottle of wine, we’re all about making good food easy—and memorable.
What started as a simple idea—a cozy spot for food lovers to enjoy the best of Vermont—has grown into a local favorite. We partner with nearby farmers and makers to bring you the freshest ingredients and a true taste of the season.
The Mill is more than just great food. It’s a place where community comes first. We believe in giving back — supporting local events, nonprofits, and youth programs that help make South Burlington shine.
Meet Jim, Chef, Owner & Community Guy
Jim McCarthy brings serious kitchen chops and a big heart to The Mill Market. A New England Culinary Institute grad, he’s cooked at local favorites like Single Pebble and Shelburne Farms—always with a focus on fresh, local ingredients and unforgettable flavors.
When he’s not cooking, Jim’s out in the community—whether it’s a cooking contest at the Champlain Valley Fair or supporting local local school food systems.
Stop by and say hi—he’s always up for a chat, and… maybe a taste test!
Antonia Cavalier, Co-Owner & Curator of Quirk
While Jim keeps the kitchen cooking, Antonia keeps The Mill wonderfully weird (in the best way). After climbing the corporate ladder at a natural gas company, she realized that pantsuits and PowerPoints weren’t her thing—and happily dove into small business ownership instead.
Antonia is the reason you’ll find Golden Girls merch, Bob Ross magnets, and mugs that say what everyone’s thinking (in big bold letters) sprinkled throughout the store. She’s always coming across something unexpected—whether it’s a sassy trinket, a nostalgic throwback, or a hilarious novelty—and finding a way to work it into The Mill’s ever-evolving vibe.
A long-time dog rescuer and foster volunteer, Antonia has a soft spot for four-legged friends. She’s also a proud member of the Vermont Army National Guard, a motorcycle rider, and the kind of person who pops in with a new idea, a new product, or a new story (usually involving a dog).
She may not be at The Mill every day, but her spirit is woven into every corner of the store—especially in the little things that make you smile when you least expect it.

Such a cute little market with a really fun selection of items! The vegan crunch breakfast sandwich was out of this world and my girlfriend got the breakfast sandwich, it was fantastic. We’ll definitely be back for more. 100% recommend this place
Absolutely amazing food & service. Jim himself delivered everything - it was piping hot, plentiful and so delicious. The crowd raved about everything (my favorite was the chicken piccata...!). Highly highly recommend! Thank you from the entire Malia Racing dragon boat crew!
